PIZZA BAGEL

This is a super easy answer to a pizza

craving that's absolutely delicious. This makes

enough to top 2 or 3 bagels depending on how

thick you spread the sauce on. These were so good

there was only half of one left when I got a chance to

take a picture.

INGREDIENTS:

  • 1 half cup of chopped up tomatoes. It doesn't matter what kind roma, cherry or grape tomatoes will do. I used grape tomatoes cut into quarters

  • Fresh Basil, a few big leaves rolled and cut into thin ribbons, also known as a chiffonade, in case you want to sound smart

  • 1half teaspoon of fennel seeds slightly ground, pestle and mortar are your friends

  • 3 inches of farmers sausage cut up into little chunks. Pepperoni or other cured sausage would work too. I used farmers sausage from Gelderman Farms

  • 1half cup grated cheese of choice, as long as it melts nice it's good. I used an aged cheddar, but of course a mozzarella or provolone works too

  • 2 or 3 bagels cut in half. I used sesame sunflower bagels from Silver Hills sprouted grain bakery

This is a super easy one. Put everything above except the bagel and cheese in a small saucepan on medium high heat.

Let the mixture start to bubble, then add a few tablespoons of water and let cook further until the tomatoes break down to a sauce consistency. This might take 15 minutes if that. You can grate your cheese while it's cooking away.

Next part is even easier - When it's smelling amazing and looks like a chunky sauce, spread it on top of bagels, top with cheese and pop them in an oven or toaster oven and grill until the cheese is bubbly gooey good.
