CARAMELIZED ONIONS

Caramelized onions; They’re a must for many reasons.  

INGREDIENTS:

 

  • 3 tablespoons extra virgin olive oil

  • 3 large onions cut in half and sliced in rings or diced

  • a half teaspoon salt

  • 1 tablespoon brown sugar


In a heavy bottom fry pan heat the oil on low
Add the sliced onion, sprinkle with salt and cook for a very long time.  Just kidding actual time should be about three hours though. Not something you want to go away and leave on the stove even if it is on low it needs to be stirred now and again to make sure it browns and doesn't burn.

When the onions start to brown after about an hour and a half sprinkle a tablespoon of brown sugar over it and stir well.   This will help it caramelize further and get that nice rich golden brown you are looking for.

Continue to cook for about another hour on low.
Remove from heat and use in your favourite recipe

You don't want them to brown too early or burn so make sure you keep the element on low. This should make enough for a couple of different recipes.  Try them in my Spanish Inspired Clam and Bean recipe
